Ingredients
  

  • 1 cup quinoa, rinsed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium cucumber, diced (about 2 cups)
  • 1 cup cherry tomatoes, halved
  • 3 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • 1 tsp honey or maple syrup
  • 1/4 cup chopped fresh herbs (dill, mint, parsley)
  • 1 tsp sea salt
  • 1 red onion, finely chopped
  • 1 ripe avocado, sliced
  • 1 tbsp chopped fresh dill
  • 1 tbsp flaxseed, optional

Method
 

  1. Preheat oven to 350ยฐF (180ยฐC) and roast quinoa for 15 minutes until fragrant
  2. In a large bowl, combine cooked quinoa, chickpeas, cucumber, tomatoes, and red onion
  3. Mix lemon juice, olive oil, garlic, honey, and salt in a small jar; shake until emulsified
  4. Stir dressing into quinoa mixture and fold until evenly distributed
  5. Top with avocado slices, chopped dill, and optional flaxseed
  6. Let sit for 5โ€“10 minutes at room temperature before serving

Add grilled vegetables or tofu for extra protein.
