Method
- Heat olive oil in a 12-inch skillet over medium heat. Add bell pepper and sauté 3-4 minutes until softened
- Push vegetables to the pan sides. Add garlic and ginger, sauté 1 minute until aromatic
- Add ground beef, breaking into small pieces. Cook 5-7 minutes until browned and nearly cooked through
- In a bowl, whisk together honey, soy sauce, sesame oil, and rice vinegar. Add to skillet with beef-pan juices
- Simmer 3-4 minutes until sauce thickens and beef is fully cooked
- Transfer beef mixture to a bowl. Add half the green onions and season with salt if using.
- In another bowl toss grated carrot with remaining green onions
- Serve beef mixture in lettuce leaves, topped with carrot-garlic garnish
Notes
Use avocado oil instead of olive oil for deeper flavor
Substitute ground turkey for lower fat content
Coconut aminos can replace soy sauce (add 1 tsp cornstarch slurry for thickness)
