Ingredients
  

  • 1 tbsp olive oil
  • Red bell pepper (1), thinly sliced
  • Ground beef (1 lb, 85% lean)
  • Garlic cloves (4), minced
  • Minced fresh ginger (2 tbsp)
  • Honey (3 tbsp)
  • Soy sauce (2 tbsp)
  • Toasted sesame oil (1 tbsp)
  • Rice vinegar (1 tbsp)
  • Green onions (4), sliced
  • Lettuce (1 head buffalo/romaine)
  • Carrot (1), grated

Method
 

  1. Heat olive oil in a 12-inch skillet over medium heat. Add bell pepper and sauté 3-4 minutes until softened
  2. Push vegetables to the pan sides. Add garlic and ginger, sauté 1 minute until aromatic
  3. Add ground beef, breaking into small pieces. Cook 5-7 minutes until browned and nearly cooked through
  4. In a bowl, whisk together honey, soy sauce, sesame oil, and rice vinegar. Add to skillet with beef-pan juices
  5. Simmer 3-4 minutes until sauce thickens and beef is fully cooked
  6. Transfer beef mixture to a bowl. Add half the green onions and season with salt if using.
  7. In another bowl toss grated carrot with remaining green onions
  8. Serve beef mixture in lettuce leaves, topped with carrot-garlic garnish

Notes

Use avocado oil instead of olive oil for deeper flavor
Substitute ground turkey for lower fat content
Coconut aminos can replace soy sauce (add 1 tsp cornstarch slurry for thickness)
Prep lettuce leaves ahead of time for quicker serving
