Ingredients
  

  • 1 lb Yukon gold potatoes, cut into 1/2-inch cubes
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tsp baking powder
  • 1 lb lean 90/10 ground beef
  • 1/2 cup iceberg lettuce, shredded thinly
  • 3/4 cup cheddar cheese, shredded
  • 1/2 cup pickles, diced
  • 1/4 cup red onions, thinly sliced
  • 2 tbsp sesame seeds
  • For the sauce: 1/2 cup mayonnaise, 2 tbsp relish, 1 tbsp mustard, 1 tsp onion powder, 1 tsp paprika

Method
 

  1. Preheat your air fryer or oven to 400°F.
  2. Place the cubed potatoes in a bowl and drizzle with olive oil.
  3. Season potatoes with garlic powder, salt, pepper, and baking powder.
  4. Arrange potatoes in a single layer and roast until golden and crispy (about 20-25 minutes).
  5. While potatoes cook, brown the ground beef in a skillet over medium-high heat until fully cooked; drain excess fat if necessary.
  6. Whisk together all sauce ingredients in a small bowl until smooth.
  7. Assemble the bowls by layering the crispy potatoes, cooked ground beef, shredded lettuce, cheese, pickles, and red onions.
  8. Drizzle the homemade sauce over the top and garnish with sesame seeds.

Notes

You can add chopped tomatoes or jalapeños for extra flavor. Store leftover sauce in an airtight container for up to 3 days. Adjust the beef seasoning with extra salt and pepper if desired.
