  • 2 Tbsp. olive oil (extra virgin preferred)
  • 2 Tbsp. salted butter
  • 6 boneless, skinless chicken cutlets (1 1/4 to 1 1/2 lbs. total)
  • Kosher salt
  • Freshly ground black pepper
  • 6 large fresh basil leaves (plus more for garnish)
  • 6 slices fresh mozzarella (low-moisture preferred)
  • Toasted ciabatta bread, for serving
  • Balsamic glaze, for drizzling

Method
 

  1. Heat oven broiler to high (500°F/260°C). Heat olive oil and butter in a skillet over medium-high.
  2. Season chicken with salt and pepper. Sear in hot skillet 3-4 minutes per side until golden.
  3. Top each cutlet with mozzarella, basil leaves, and additional salt/pepper.
  4. Broil 8-10 minutes until cheese melts and edges brown.
  5. Arrange on ciabatta slices, drizzle with balsamic glaze, and garnish with fresh basil.

Notes

For mozzarella: feta or ricotta work as substitutes. For herbs: substitute basil with fresh oregano or thyme.
Use avocado oil instead of olive oil if preferred. For bread alternatives: sourdough or baguette.
Monitor broiling time closely to avoid over-browning the cheese.
