Ingredients
  

  • 1 cup white or brown rice, rinsed
  • 1 cup salsa with spring onion
  • 2 cups filtered water (3.5 cups for brown rice)
  • 2 tbsp fresh lime juice (or bottled)
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup shredded cheddar or colby jack cheese
  • 1 application nonstick cooking spray (optional)

Method
 

  1. Prepare ingredients: rinse rice, rinse drain beans, measure water and lime juice.
  2. In a rice cooker or oven-safe dish, layer rice, water/salsa blend, and beans.
  3. Cover, bake at 375°F (190°C) for 30–35 minutes (white rice) or 40–45 minutes (brown rice).
  4. Top with cheese, return to oven 5–10 minutes until golden.
  5. Let rest 3 minutes before slicing.

Notes

Use medium-grain rice for better moisture retention.
Optional nonstick spray prevents sticking in the dish.
Adjust water for brown rice if needed.
Letting the casserole rest ensures cleaner slices.
Customize with toppings like cilantro, avocado, or sour cream.
