Ingredients
  

  • 12 oz rotini pasta
  • 2 cups cooked and diced chicken breast
  • 2 cups grape tomatoes, halved
  • 1 English cucumber, diced
  • ¼ cup fresh parsley, chopped
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1½ cups ranch dressing
  • 1 cup cheddar or American cheese, sliced
  • 6 halal-certified bacon alternatives, cooked and crumbled

Method
 

  1. Cook pasta according to package instructions or in an Instant Pot. Drain and rinse with cold water
  2. In a large bowl, combine cooked pasta, chicken, tomatoes, cucumber, parsley, sea salt, black pepper, onion powder, and garlic powder
  3. Mix in ranch dressing, ¾ cup of sliced cheese, and half the cooked halal bacon. Toss until evenly distributed
  4. Top with remaining cooked halal bacon and additional chopped parsley
  5. Chill in the refrigerator for at least 30 minutes before serving

Notes

Use tri-color rotini for visual interest
Substitute English cucumber with 2 cups chopped celery if unavailable
Adjust cheese to taste (add ¼ cup additional cheese for richer flavor)
For extra crisp, add a bit of red wine vinegar to the dressing (alcohol-free variant recommended)
