  • 2 (8-oz) cooked chicken breasts (grilled, baked, or sautéed)
  • 1 head romaine lettuce (chopped)
  • 2 cups grape tomatoes (halved, optional)
  • 3/4 cup Parmesan cheese (shredded or grated)
  • 1 cup croutons (gluten-free optional)

Method
 

  1. Make the Caesar salad dressing (whisk anchovies, lemon juice, olive oil, egg yolk, and Dijon mustard). Set aside extra for future use
  2. Preheat oven to 375°F (190°C)
  3. Season chicken breasts with salt and pepper
  4. Bake chicken for 25-30 minutes until 165°F internal temperature
  5. Rest chicken for 5 minutes, then slice thinly against the grain
  6. Assemble salad with chopped romaine, grape tomatoes (if using), croutons, and parmesan
