- Preheat oven to broil (high setting)
- Prepare marinated tomatoes: In bowl, mix 2 tomatoes with 1 Tbsp pesto, 1 Tbsp balsamic glaze. Season with pinches of salt and pepper. Set aside
- Heat 1 Tbsp olive oil + 1 Tbsp butter in skillet over medium-high heat
- Season chicken with salt and pepper
- Cook chicken 3 minutes per side until golden and cooked through
- Top each cutlet with 1 basil leaf and 1 mozzarella slice
- Transfer to oven: Broil 2-3 minutes until cheese melts and bubbles
- Add marinated tomatoes to chicken cutlets
- Serve on toasted ciabatta

Use buffalo milk mozzarella for stronger flavor
