Ingredients
  

  • Olive oil, extra virgin - 2 Tbsp
  • Butter, salted - 2 Tbsp
  • Chicken cutlets, boneless skinless breasts (thinly sliced) - 6 pieces (1 1/4-1 1/2 lbs.)
  • Basil leaves, fresh - 6 large + extra
  • Mozzarella cheese slices - 6
  • Ciabatta bread, sliced and toasted - 6 pieces
  • Pesto - 1 Tbsp
  • Balsamic glaze - 1 Tbsp
  • Tomatoes - 2
  • Kosher salt - to taste
  • Black pepper - to taste

Method
 

  1. Preheat oven to broil (high setting)
  2. Prepare marinated tomatoes: In bowl, mix 2 tomatoes with 1 Tbsp pesto, 1 Tbsp balsamic glaze. Season with pinches of salt and pepper. Set aside
  3. Heat 1 Tbsp olive oil + 1 Tbsp butter in skillet over medium-high heat
  4. Season chicken with salt and pepper
  5. Cook chicken 3 minutes per side until golden and cooked through
  6. Top each cutlet with 1 basil leaf and 1 mozzarella slice
  7. Transfer to oven: Broil 2-3 minutes until cheese melts and bubbles
  8. Add marinated tomatoes to chicken cutlets
  9. Serve on toasted ciabatta

Notes

Use buffalo milk mozzarella for stronger flavor
Customize by substituting basil for dill or heirloom tomatoes
Use garlic-buttered ciabatta for extra flavor
