- Preheat a cast iron skillet or grill plate to medium-high heat
- Cut rolls in half and pat olive oil onto both cut sides
- Rub micro-grated garlic onto the inner bread surfaces
- Marinate chicken breast with pesto
- Season chicken with salt and pepper
- Grill chicken on both sides until golden and cooked through (8-10 minutes total)
- Layer mozzarella, tomatoes, and ½ tbsp pesto onto the bottom roll halves
- Sprinkle fresh black pepper
- Top with grilled chicken, remaining pesto, and balsamic glaze
- Close the sandwiches and serve immediately
