Ingredients
  

  • 2 large chicken breasts
  • ¼ cup olive oil
  • 1 clove garlic
  • 2 tbsp pesto
  • 1 cup fresh mozzarella slices
  • ¾ cup sliced Roma tomatoes
  • 1 tbsp balsamic glaze
  • 4-5 ciabatta or kaiser rolls (or 2 chapati/lavash for low-carb option)

Method
 

  1. Preheat a cast iron skillet or grill plate to medium-high heat
  2. Cut rolls in half and pat olive oil onto both cut sides
  3. Rub micro-grated garlic onto the inner bread surfaces
  4. Marinate chicken breast with pesto
  5. Season chicken with salt and pepper
  6. Grill chicken on both sides until golden and cooked through (8-10 minutes total)
  7. Layer mozzarella, tomatoes, and ½ tbsp pesto onto the bottom roll halves
  8. Sprinkle fresh black pepper
  9. Top with grilled chicken, remaining pesto, and balsamic glaze
  10. Close the sandwiches and serve immediately

Notes

Blot Roma tomatoes before use to prevent sogginess
Use air-fried chicken thighs for juicier results
For vegan option, substitute with nutritional yeast-based mozzarella
Pesto can be homemade or store-bought
Avoid using alcohol in pesto for strict halal compliance
