Method
- Season chicken breasts with oregano, paprika, salt, and pepper.
- Heat olive oil in a skillet. Sear chicken until golden, 4-5 minutes per side. Remove to a bowl.
- Add zucchini, garlic, onion powder, and ½ tsp oregano to the same skillet. Roast at 400°F for 18-20 minutes.
- Steam cauliflower until tender, 12-15 minutes. Mash with softened butter, Parmesan, and a pinch of salt.
- Layer seared chicken, cauliflower mash, and roasted veggies into four meal prep containers.
