Ingredients
  

  • Chicken breasts, 2 (6 oz each)
  • Extra virgin olive oil, 1 tbsp
  • Dried oregano, 1 tsp
  • Paprika, 1 tsp
  • Onion powder, 1 tsp
  • Cauliflower, 1 medium head
  • Minced garlic, ¼ tsp
  • Butter, 1½ tbsp
  • Shredded Parmesan, ¼ cup
  • Zucchini, 2 cups chopped

Method
 

  1. Season chicken breasts with oregano, paprika, salt, and pepper.
  2. Heat olive oil in a skillet. Sear chicken until golden, 4-5 minutes per side. Remove to a bowl.
  3. Add zucchini, garlic, onion powder, and ½ tsp oregano to the same skillet. Roast at 400°F for 18-20 minutes.
  4. Steam cauliflower until tender, 12-15 minutes. Mash with softened butter, Parmesan, and a pinch of salt.
  5. Layer seared chicken, cauliflower mash, and roasted veggies into four meal prep containers.

Notes

Use olive oil when roasting veggies to maximize flavor
Substitute zucchini with asparagus or bell peppers
Replace Parmesan with goat cheese or omitted for a vegan option
Store in airtight containers for up to 4 days
