Ingredients
  

  • Boneless Skinless Chicken Thighs 6-8 pieces
  • Olive Oil 1/2 cup
  • Lemons 2 (juiced)
  • Garlic 6 cloves
  • Paprika 2 teaspoons
  • Cumin 2 teaspoons
  • Red Pepper Flakes To taste
  • Jasmine Rice 1 1/2 cups dry
  • Tzatziki Sauce (see below)
  • Red Onion 1 (chopped)
  • Salt To taste
  • Black Pepper To taste
  • Turmeric 1 teaspoon
  • Cinnamon 1 teaspoon

Method
 

  1. Combine olive oil, lemon juice, garlic, salt, black pepper, cumin, paprika, turmeric, cinnamon, and red pepper flakes in a bowl
  2. Submerge chicken thighs in the marinade and refrigerate for at least 1 hour
  3. Chop red onion and set aside
  4. Preheat oven to 425°F (220°C) and grease a baking pan
  5. Arrange chicken thighs and chopped onions on the pan, brushing with excess marinade
  6. Bake for 30-40 minutes until chicken reaches 165°F (74°C)
  7. Cook jasmine rice according to package instructions
  8. Prepare tzatziki sauce using Greek yogurt, garlic, cucumbers, dill, and lemon juice
  9. Assemble bowls with rice, chicken, onions, and tzatziki

Notes

For deeper flavor, marinate chicken overnight
Use one pan for chicken and vegetables to minimize cleanup
Store leftovers in airtight containers for up to 3 days
Customize with pita bread, pickled vegetables, or fresh herbs
