- Combine olive oil, lemon juice, garlic, salt, black pepper, cumin, paprika, turmeric, cinnamon, and red pepper flakes in a bowl
- Submerge chicken thighs in the marinade and refrigerate for at least 1 hour
- Chop red onion and set aside
- Preheat oven to 425°F (220°C) and grease a baking pan
- Arrange chicken thighs and chopped onions on the pan, brushing with excess marinade
- Bake for 30-40 minutes until chicken reaches 165°F (74°C)
- Cook jasmine rice according to package instructions
- Prepare tzatziki sauce using Greek yogurt, garlic, cucumbers, dill, and lemon juice
- Assemble bowls with rice, chicken, onions, and tzatziki
