  • 3 medium Russet potatoes
  • 500 grams 90% lean ground beef
  • 2 tablespoons extra virgin olive oil
  • 2 cups shredded iceberg lettuce
  • 1 cup shredded cheddar cheese
  • 1/2 cup pickle slices
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon yellow mustard
  • 1 teaspoon pickle juice

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Combine the smoked paprika, garlic powder, onion powder, oregano, salt, and pepper in a small bowl to create the spice blend.
  3. Scrub the potatoes and cut them into uniform chips; pat them thoroughly dry with paper towels.
  4. Toss the potato chips with one tablespoon of olive oil and half of the spice blend; arrange on a baking sheet and bake for 30-40 minutes until golden and crispy.
  5. In a large skillet, heat the remaining olive oil over medium-high heat and add the ground beef.
  6. Cook the beef until browned, breaking it up with a spoon, and stir in the remaining spice blend; sauté until the beef is fully cooked.
  7. Whisk together the mayonnaise, ketchup, mustard, and pickle juice in a small bowl to make the burger sauce.
  8. Assemble the bowls by placing a base of shredded lettuce, topping with the seasoned beef, crispy potato chips, cheese, and pickles.
  9. Finish by drizzling the homemade sauce over each bowl before serving.

Notes

Store the components in separate airtight containers in the refrigerator for up to 3 days. Reheat the beef and potato chips separately to maintain the best texture. If you prefer a dairy-free option, use a compliant nut-based cheddar shred.
