  • Lemon juice (1 tbsp)
  • Garlic (2 cloves)
  • Oregano (1 tsp)
  • Smoked paprika (1 tsp)
  • Cumin (½ tsp)
  • Salt (½ tsp)
  • Pepper (¼ tsp)
  • Couscous (3 cups cooked)
  • Cherry tomatoes (1½ cups halved)
  • Cucumber (1 cup diced + ½ large for tzatziki)
  • Red onion (½ small thinly sliced)
  • Chickpeas (1 cup drained)
  • Kalamata olives (½ cup)
  • Feta (½ cup crumbled)
  • Substitute tofu for plant-based option
  • Use quinoa or bulgur instead of couscous
  • Replace feta with vegan cheese if desired

Method
 

  1. Preheat oven to 375°F (190°C)
  2. Season chicken breasts with garlic, paprika, cumin, oregano, salt, and pepper
  3. Heat olive oil in a skillet, cook chicken 5-7 minutes per side; finish in oven if needed
  4. Dice cucumber and slice cherry tomatoes
  5. Mix cooked couscous with lemon juice and red onion
  6. Combine cottage cheese with remaining ingredients for tzatziki dressing
  7. Layer couscous, chicken, tzatziki, tomatoes, cucumber, olives, and feta in bowls

Notes

Tofu substitute: marinate in lemon-paprika mixture before cooking
