  • 2 English Cucumbers
  • 150 g Feta Cheese (block style)
  • 1/4 cup Fresh Dill
  • 2 tbsp Fresh Chives
  • 1 handful Fresh Basil
  • 2 tbsp Extra Virgin Olive Oil
  • 2 tbsp Lemon Juice
  • 1 tsp Fine Sea Salt
  • 1/2 tsp Freshly Cracked Black Pepper

Method
 

  1. Chop the English cucumbers into bite-sized pieces and transfer them into a large mixing bowl.
  2. Slice the block of feta cheese into uniform cubes.
  3. Add the cubed feta cheese into the bowl with the cucumbers.
  4. Finely chop the fresh chives and dill.
  5. Tear the basil leaves into smaller pieces by hand.
  6. Add the prepared herbs into the mixing bowl.
  7. Drizzle with olive oil and fresh lemon juice.
  8. Sprinkle with salt and black pepper.
  9. Toss everything gently to combine and serve immediately.
