  • Grape/cherry tomatoes, halved (2 pints)
  • Feta cheese, diced (8 oz)
  • Parsley, chopped (1/4 cup)
  • Olive oil (1/4 cup)
  • Apple cider vinegar (2 tbsp)
  • Garlic, minced (2 cloves)

Method
 

  1. Dice cucumber, halve tomatoes, and dice feta.
  2. Combine all ingredients in a large bowl.

Notes
