  • 4 1/2 cups sweet potatoes, cubed into 1-inch pieces
  • 1 pound lean ground beef (90/10 or 95/5)
  • 2 cups cottage cheese
  • 1 large avocado, fresh
  • 1 tablespoon taco seasoning
  • 1 tablespoon tomato paste
  • 4 tablespoons hot honey
  • Salt, pepper, and cinnamon to taste
  • Avocado oil spray for roasting

Method
 

  1. Preheat your oven to 425 degrees F.
  2. Place cubed sweet potatoes on a large baking sheet and lightly spray with avocado oil.
  3. Season the potatoes with salt, pepper, and cinnamon, tossing thoroughly to coat.
  4. Roast for 30 minutes, flipping halfway through for even browning.
  5. Heat a large skillet over medium-high heat and add the ground beef.
  6. Cook beef until browned, breaking it apart with a spatula.
  7. Stir in tomato paste and taco seasoning; cook for 2 minutes.
  8. Divide the sweet potatoes and beef into four meal prep containers.
  9. Add 1/2 cup of cottage cheese to each container.
  10. Top with fresh sliced avocado and drizzle with hot honey before serving.

Notes

Store in airtight containers in the refrigerator for up to 4 days. Slice the avocado immediately before serving to prevent oxidation and browning. Feel free to adjust the hot honey to your preferred heat level.
