- Preheat your oven to 425 degrees F.
- Place cubed sweet potatoes on a large baking sheet and lightly spray with avocado oil.
- Season the potatoes with salt, pepper, and cinnamon, tossing thoroughly to coat.
- Roast for 30 minutes, flipping halfway through for even browning.
- Heat a large skillet over medium-high heat and add the ground beef.
- Cook beef until browned, breaking it apart with a spatula.
- Stir in tomato paste and taco seasoning; cook for 2 minutes.
- Divide the sweet potatoes and beef into four meal prep containers.
- Add 1/2 cup of cottage cheese to each container.
- Top with fresh sliced avocado and drizzle with hot honey before serving.
Notes
Store in airtight containers in the refrigerator for up to 4 days. Slice the avocado immediately before serving to prevent oxidation and browning. Feel free to adjust the hot honey to your preferred heat level.
