  • 1 pound ground beef
  • 1.3 ounce packet (about 4 tablespoons) taco seasoning
  • ⅓ cup water
  • 1 tablespoon tomato paste
  • 1 tablespoon olive oil
  • 2 red bell peppers, thinly sliced
  • 1 red onion, thinly sliced
  • 2 cups cooked white rice
  • Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream or plain Greek yogurt, salsa, avocado or guacamole, jalapeños

Method
 

  1. Cook the Ground Beef: In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spoon. Drain off any excess fat.
  2. Add Seasoning: Stir in the taco seasoning, water, and tomato paste. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened, stirring occasionally.
  3. Sauté Vegetables: While the beef is cooking, heat the olive oil in another skillet over medium heat. Add the sliced bell peppers and red onion. Sauté for 5-7 minutes until tender-crisp.
  4. Assemble the Bowls: Divide the cooked white rice among four serving bowls. Top each bowl with a portion of the seasoned ground beef and the sautéed vegetables.
  5. Add Toppings: Customize each bowl with your favorite optional toppings like shredded lettuce, diced tomatoes, cheese, sour cream, salsa, and avocado.

Notes

For a spicier kick, add a pinch of cayenne pepper to the ground beef or include sliced jalapeños as a topping.
