Ingredients
  

  • 1 Tbsp Avocado Oil
  • 1 lb Ground Turkey (93/7 lean)
  • 1 Tbsp Fresh Ginger, minced
  • 1 small Carrot, shredded
  • 4 cloves Garlic, minced
  • 3 Tbsp Coconut Aminos
  • 1 Tbsp Rice Vinegar
  • 1 tsp Toasted Sesame Oil
  • 1 lime, juiced
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Red Pepper Flakes
  • 1/4 cup Green Onions, sliced
  • 1 head Bibb Lettuce

Method
 

  1. Heat a large skillet over medium-high heat.
  2. Add the avocado oil and ground turkey to the skillet.
  3. Brown the turkey thoroughly, breaking it into small crumbles with a spatula.
  4. Add the minced garlic, shredded carrot, and ginger to the meat; cook for 2-3 minutes until fragrant.
  5. Stir in the coconut aminos, rice vinegar, toasted sesame oil, lime juice, salt, pepper, and red pepper flakes.
  6. Simmer for 2 minutes to allow the flavors to meld and the sauce to glaze the turkey.
  7. Remove from heat and stir in the sliced green onions.
  8. Spoon the mixture into clean, dry Bibb lettuce leaves and serve immediately.

Notes

Ensure the lettuce leaves are washed and patted very dry for the best crunch. If you prefer more spice, increase the red pepper flakes. Leftover filling can be stored in an airtight container for up to 3 days and served over rice or in a bowl.
