- Preheat a large skillet over medium-high heat and add 1 tablespoon olive oil.
- Add lean ground turkey or beef to the pan and cook until browned and cooked through.
- Sprinkle taco seasoning mix and salt over the meat; stir to coat. Cook for 2 minutes.
- In a separate pan, add the remaining tablespoon of olive oil and cook the cauli rice for 5–7 minutes, stirring occasionally.
- Add the bell pepper to the cauli rice and continue cooking for another 3 minutes.
- Meanwhile, drain the black beans and set aside for topping.
- Assemble the bowls by dividing the cauli rice and meat between four bowls.
- Top with black beans, sliced avocado, cilantro, and a squeeze of lime juice.
- Garnish with lime zest for extra brightness.
