Ingredients
  

  • 2 lb ground chicken (93% lean)
  • 2 Tbsp mayonnaise
  • 3/4 cup panko breadcrumbs
  • 1/2 medium yellow onion, finely chopped
  • 6 slices sharp cheddar cheese
  • 6 brioche buns
  • 1 Tbsp butter
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce (non-alcoholic)
  • Sauce: 1/2 cup mayonnaise, 2 Tbsp ketchup, 1 Tbsp chopped gherkins, 1 tsp gherkin juice, 1 tsp yellow mustard

Method
 

  1. Whisk sauce ingredients together in a medium bowl and refrigerate for 30 minutes.
  2. Melt butter in a skillet, sauté onions with sugar and salt until golden, then cool.
  3. Combine chicken, panko, mayonnaise, Worcestershire, garlic powder, salt, pepper, and caramelized onions in a large bowl.
  4. Shape the mixture into 6 equal patties.
  5. Heat a lightly greased skillet or griddle over medium-high heat.
  6. Cook patties for 5-6 minutes per side until the internal temperature reaches 165°F.
  7. Top patties with cheddar cheese in the last minute of cooking until melted.
  8. Serve on toasted brioche buns with the prepared signature sauce.

Notes

Ensure the onions have cooled before mixing into the chicken to maintain texture. Do not overmix the raw meat, handle gently to keep the patties tender. Serve with crisp lettuce or tomato slices for added crunch.
