  • 2 lemons, zest and juice 1; slice remaining
  • 1/4 cup extra virgin olive oil (or avocado oil)
  • 5 large garlic cloves, crushed/minced
  • 1 1/2 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup chopped Italian parsley + extra for garnish
  • 2 lbs (4 large) boneless skinless chicken breasts
  • Kosher salt to taste

Method
 

  1. Zest and juice one lemon; slice remaining for serving
  2. Mince garlic using a press for smoother emulsion
  3. Combine olive oil, lemon zest, garlic, Italian seasoning, red pepper flakes, and chopped parsley in a bowl
  4. Season chicken with salt, then submerge in marinade
  5. Using a mallet, gently flatten chicken to 1/2-inch thickness
  6. Cook in a hot skillet (no oil needed) until golden and juicy, ~4 minutes per side
  7. Toss with roasted garlic and chopped lemon slices, then garnish with fresh parsley
