Ingredients
  

  • Large shrimp (peeled and deveined)
  • 1 ½ pounds
  • Olive oil
  • 1 tablespoon
  • Butter
  • 2 tablespoons
  • Garlic (minced)
  • 4 cloves
  • Paprika
  • 1 teaspoon
  • Red pepper flakes
  • ½ teaspoon
  • Salt
  • ½ teaspoon
  • Black pepper
  • ¼ teaspoon
  • Heavy cream
  • 1 cup
  • Chicken broth
  • ½ cup
  • Grated parmesan
  • ¾ cup
  • Sun-dried tomatoes
  • ½ cup chopped
  • Italian seasoning
  • 1 teaspoon
  • Spinach
  • 2 cups fresh

Method
 

  1. Pat shrimp dry and season with paprika, salt, pepper, and half the garlic.
  2. Heat olive oil and butter in a skillet over medium-high heat.
  3. Sear shrimp in batches for 1-2 minutes per side until golden.
  4. Add remaining garlic, red pepper flakes, and sun-dried tomatoes; sauté 1 minute.
  5. Pour in chicken broth, heavy cream, and Italian seasoning; simmer 3-4 minutes until slightly thickened.
  6. Stir in spinach and grated parmesan until wilted and evenly coated.
  7. Adjust seasoning and serve warm.

Notes

Use coconut milk instead of heavy cream for dairy-free.
Substitute vegetable broth for vegan option.
Swiss chard or kale works in place of spinach.
Smoked paprika adds extra depth.
Adjust red pepper flakes to taste.
