- Prepare the brine by dissolving 0.25 cup kosher salt in 2 cups lukewarm water.
- Add 2 cups cold water, submerge the chicken, and brine for 15 minutes.
- Remove chicken, rinse under cold water, and pat thoroughly dry with paper towels.
- Preheat oven to 450 degrees Fahrenheit.
- Place chicken in a baking dish and brush both sides with olive oil or melted butter.
- Combine dry spices in a small bowl and dust both sides of the chicken evenly.
- Bake for 18 minutes until the internal temperature reaches 165 degrees Fahrenheit.
Notes
Pound the chicken breasts to an even thickness before brining to ensure uniform cooking. Use avocado oil if you prefer a higher smoke point oil. Always let the chicken rest for 5 minutes before slicing to keep the juices inside.
