Ingredients

  • 16 oz cream cheese, room temperature
  • 3 1/2 cups shredded sharp cheddar cheese
  • 1 oz dry ranch seasoning mix
  • 1 1/2 cups crushed pecans
  • 1 green bell pepper stem

Method

  1. Place cream cheese, shredded cheddar, and ranch seasoning into a stand mixer bowl.
  2. Mix until thoroughly combined and smooth.
  3. Transfer the mixture onto a large sheet of plastic wrap.
  4. Use the plastic wrap to form the mixture into a ball shape.
  5. Wrap thin rubber bands around the exterior of the ball to create natural pumpkin segments.
  6. Refrigerate for at least 4 hours to set.
  7. Remove plastic wrap and rubber bands, then coat the ball in crushed pecans.
  8. Insert the bell pepper stem into the top center to complete the pumpkin design.

Notes

Ensure the cheese sits at room temperature before mixing to prevent lumps. The flavor deepens over time, so preparing this a day in advance is highly recommended. Serve with assorted crackers or fresh vegetable crudites for dipping.
