- Gather mixing bowls, hand mixer, and chilled ingredients. Ensure gelatin is fresh
- Combine pumpkin puree, heavy cream, maple syrup, and cinnamon in a large bowl. Gently fold until smooth
- Bloom 2 teaspoons of gelatin in 3 tablespoons cold water for 5 minutes. Microwave 5-7 seconds to dissolve
- Add gelatin mixture to pumpkin blend. Whisk thoroughly to fully incorporate and remove any streaks
- Using a hand mixer on medium speed, whip the mixture for 2-3 minutes until reaching soft peak texture
- Refrigerate for 3-4 hours (or until set) before serving cold
