Ingredients
  

  • 1 lb flank steak
  • 2 Tbsp olive oil
  • 1 lb broccoli
  • 6 Tbsp low sodium soy sauce (GF tamari optional)
  • 3 Tbsp light brown sugar
  • 1 Tbsp cornstarch (for sauce)
  • 1 Tbsp toasted sesame seeds (optional garnish)

Method
 

  1. Freeze flank steak uncovered for 30 minutes
  2. Slice steak against grain into 1/4" strips
  3. Cut broccoli into 1" florets and separate stems
  4. Combine soy sauce, brown sugar, and cornstarch in bowl
  5. Heat 1 Tbsp oil, sauté broccoli 4-5 minutes until tender-crisp
  6. Transfer broccoli to bowl, leave remaining oil for beef
  7. Cook beef in single layer over high heat 1-2 minutes per side
  8. Pour sauce into pan, simmer 3-4 minutes until thickened
  9. Add broccoli back and stir-fry 1 minute to combine
  10. Serve immediately over rice with sesame seeds if desired

Notes

Freezing steak before slicing ensures paper-thin cuts
Use cauliflower rice for keto version
Add 2 tbsp water if needing softer broccoli
GF option: use tamari and cornstarch-free rice stir-fry
