Method
- Freeze flank steak uncovered for 30 minutes
- Slice steak against grain into 1/4" strips
- Cut broccoli into 1" florets and separate stems
- Combine soy sauce, brown sugar, and cornstarch in bowl
- Heat 1 Tbsp oil, sauté broccoli 4-5 minutes until tender-crisp
- Transfer broccoli to bowl, leave remaining oil for beef
- Cook beef in single layer over high heat 1-2 minutes per side
- Pour sauce into pan, simmer 3-4 minutes until thickened
- Add broccoli back and stir-fry 1 minute to combine
- Serve immediately over rice with sesame seeds if desired

Freezing steak before slicing ensures paper-thin cuts
