Quick & Easy Korean Beef Bowls

Ingredients
  

  • 1 pound ground beef (80/20 or 85/15 recommended)
  • 2 tablespoons vegetable oil (or canola/neutral oil)
  • 3 cloves garlic, minced
  • 2 green onions, thinly sliced (whites and greens separated)
  • For the Sauce:
  • ¼ cup packed brown sugar
  • ¼ cup reduced-sodium soy sauce (or tamari for gluten-free)
  • 2 teaspoons toasted sesame oil
  • ½ teaspoon crushed red-pepper flakes (adjust to taste)
  • ¼ teaspoon ground ginger

Method
 

  1. 1. In a small bowl, whisk together all the sauce ingredients: brown sugar, soy sauce, sesame oil, crushed red-pepper flakes, and ground ginger. Set aside.
  2. 2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. 3. Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain off any excess fat.
  4. 4. Add the minced garlic and the white parts of the green onions to the skillet. Cook for about 1 minute until fragrant.
  5. 5. Pour the prepared sauce over the beef mixture. Stir well to coat the beef evenly.
  6. 6. Continue to cook for another 2-3 minutes, allowing the sauce to thicken and glaze the beef.
  7. 7. Serve the Korean beef mixture over steamed rice. Garnish with the green parts of the sliced green onions and optional sesame seeds.

Notes

Serve over steamed white or brown rice. Other topping suggestions include a fried egg, kimchi, shredded carrots, cucumber slices, or a drizzle of sriracha. For a milder spice, reduce or omit the red pepper flakes. Ground turkey or chicken can be substituted for ground beef for a lighter option.
