  • 2 pounds steak tips (sirloin or tenderloin recommended), cut into 2-inch pieces
  • 1/2 cup ketchup
  • 1/4 cup Coca-Cola
  • 2 tablespoons red wine vinegar
  • 2 tablespoons Worcestershire sauce (ensure halal/non-alcoholic if needed)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1 teaspoon Diamond Crystal Kosher Salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 2 tablespoons canola oil

Method
 

  1. In a bowl, combine ketchup, Coca-Cola, red wine vinegar, Worcestershire sauce, garlic powder, and oregano. Whisk until well combined.
  2. Add the steak tips to the marinade, ensuring each piece is coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
  3. Remove steak tips from the marinade, discarding the excess marinade. Pat the steak tips dry with paper towels.
  4. Season the steak tips generously with kosher salt and black pepper.
  5. Heat canola oil in a large cast-iron skillet over high heat until shimmering but not smoking.
  6. Carefully add steak tips to the hot skillet in a single layer, working in batches if necessary to avoid overcrowding.
  7. Sear steak tips for 3-4 minutes per side, until a deep brown crust forms and the internal temperature reaches your desired doneness (130-135°F for medium-rare).
  8. Remove steak tips from the skillet and let them rest on a cutting board for 5-10 minutes before serving.

Notes

For best results, use a cast-iron skillet. Do not overcrowd the pan when searing; cook in batches if needed to maintain a high pan temperature.
Ensure your Worcestershire sauce is halal and does not contain alcohol.
