Ingredients
  

  • 10 rice paper sheets
  • 2 cups eggless vermicelli noodles (cooked and cooled)
  • 1 cup shredded carrots
  • 1 cup chopped Napa cabbage
  • 1 cup firm tofu or shrimp (cubed, pre-cooked)
  • 2 stalks green onion (thinly sliced)
  • 1 tablespoon grated ginger
  • 2 cloves garlic
  • 2 tablespoons tamari
  • 1 teaspoon rice vinegar
  • Premium oil spray

Method
 

  1. Preheat air fryer to 375°F (190°C)
  2. Submerge rice paper sheets in warm water 10-15 seconds until pliable
  3. On each sheet, layer 1/4 cup noodles, 1/4 cup carrot-cabbage mix, 1 tablespoon tofu/shrimp, and 1/2 teaspoon tamari sauce
  4. Fold edges inward, roll tightly, and slice into halves or quarters
  5. Place seam-side down in air fryer basket, spray with oil
  6. Air fry 7-8 minutes until golden brown and crisp
  7. Serve with remaining tamari-ginger sauce

Notes

For gluten-free version, use tamari exclusively
Substitute noodles with soba or zucchini noodles
Add fresh herbs like mint or cilantro
Adjust fillings based on pantry (spinach, avocado, grilled veggies)
