Roasted Rosemary and Parmesan Sweet Potatoes

These roasted sweet potatoes are a gourmet yet simple side dish that transforms humble root vegetables into a flavor-packed experience. By roasting at a high temperature, the natural sugars in the potatoes caramelize beautifully, while a generous dusting of fresh rosemary, aromatic garlic salt, and crispy, savory Parmesan cheese provides a sophisticated finish. Perfect for busy weeknights or as an elegant accompaniment to your weekend family gatherings, this one-pan recipe is both nutritious and incredibly satisfying.

Ingredients

  • 2 lbs sweet potatoes, peeled and cut into 1-inch cubes
  • 1.5 tablespoons extra virgin olive oil
  • 1 heaping tablespoon fresh rosemary, finely minced
  • 3/4 teaspoon garlic salt
  • 1/4 cup Parmesan cheese, freshly grated
  • Black pepper, to taste

Method

  1. Adjust the oven rack to the center position and preheat oven to 400°F.
  2. Combine cubed sweet potatoes and olive oil in a large mixing bowl, tossing until evenly coated.
  3. Sprinkle the rosemary, garlic salt, and black pepper over the potatoes and stir well to distribute the seasonings.
  4. Spread the potatoes in a single layer on a large rimmed baking sheet.
  5. Roast for 15 minutes, then remove the pan from the oven.
  6. Use a metal spatula to turn the potatoes and scrape any caramelized bits from the pan surface.
  7. Return the pan to the oven and roast for an additional 15 minutes until tender and golden.
  8. Remove from the oven, sprinkle immediately with freshly grated Parmesan cheese, and serve warm.

Notes

Ensure the potatoes are cut into uniform pieces to promote even roasting. Using a rimmed baking sheet helps keep the potatoes organized while preventing oil drippings from spilling. If you prefer a crunchier crust, you can place the potatoes under the broiler for 1-2 minutes after adding the Parmesan, watching carefully to prevent burning.
