  • 1 lb Sweet Potatoes, peeled and cubed (1-2 inch pieces)
  • 1 lb Extra Lean Ground Beef
  • 14 oz can Black Beans, drained and rinsed
  • 1 cup Corn kernels (fresh or canned)
  • 1 pint Cherry Tomatoes, halved
  • 1 medium Avocado, sliced
  • 1 tbsp Vegetable oil
  • 1 tbsp Chili powder
  • 1 tsp Smoked paprika
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1 tsp Garlic powder
  • 1 tsp Onion powder

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with oil and half of the mixed spices on a parchment-lined baking sheet.
  3. Bake for 15-20 minutes until edges are golden brown and centers are tender.
  4. Heat a large skillet over medium-high heat and brown the ground beef for 5-7 minutes, draining excess fat if needed.
  5. Add the beans, corn, and the remaining half of the spice mixture to the skillet.
  6. Sauté the beef mixture for 3-5 minutes until heated through and fragrant.
  7. Assemble the bowls by layering the roasted sweet potatoes and the seasoned beef mixture.
  8. Top with fresh cherry tomatoes and sliced avocado.

Notes

Cut sweet potatoes into uniform sizes to ensure even cooking. Substitute ground turkey for an even leaner option. Use high-quality smoked paprika to enhance the savory depth. Store leftovers in an airtight container for up to 3 days.
