- Cover the skillet tightly and cook until the sweet potatoes are fork-tender, adding a splash of water if needed to prevent sticking.
- Top with mozzarella cheese and place in the oven briefly to melt if desired before serving.
Notes
You can omit the mozzarella cheese to make this meal Paleo or Whole30 compliant. Use extra-lean ground turkey to help with fat control, and ensure the sweet potatoes are diced small for the most even cooking.
