  • 1 tsp Garlic, minced
  • 0.5 cup Onions, chopped
  • 0.5 cup Yellow Pepper, diced
  • 0.5 cup Mozzarella cheese, shredded
  • Salt, pepper, and chili flakes to taste

Method
 

  1. Heat the olive oil in a large cast-iron skillet over medium-high heat until shimmering.
  2. Add the ground turkey and minced garlic, breaking the meat apart with a spoon.
  3. Sauté for five minutes or until the turkey is fully browned.
  4. Incorporate the onions and yellow peppers, cooking until the vegetables soften.
  5. Stir in the diced sweet potatoes, chili flakes, salt, and pepper to coat thoroughly.
  6. Cover the skillet tightly and cook until the sweet potatoes are fork-tender, adding a splash of water if needed to prevent sticking.

Notes

You can omit the mozzarella cheese to make this meal Paleo or Whole30 compliant. Use extra-lean ground turkey to help with fat control, and ensure the sweet potatoes are diced small for the most even cooking.
