Ingredients

  • 2 tsp avocado oil (or olive oil)
  • 1 cup diced onions (or onion powder)
  • 1 lb lean ground turkey (can substitute with ground beef or chicken with 1 tsp smoked paprika)
  • 2 tbsp Greek yogurt (or coconut yogurt for vegan)
  • 1.5 cups cherry tomatoes (or diced cucumber)
  • 1 cup cheddar cheese (or pepper jack/mozzarella)
  • 2 cups frozen waffle fries or 2 cups halved baby potatoes
  • 2 tbsp mayonnaise (use vegan mayo if needed)
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 1 tbsp cajun seasoning
  • 2 tbsp pickle juice (adjust for thickness)
  • 1 head iceberg lettuce, chopped
  • 1 cup dill pickles, sliced
  • 1/2 cup thinly sliced red onion

Method

  1. Preheat air fryer to 400°F or oven.
  2. For frozen fries: Air fry 10-15 minutes. For baby potatoes: Toss halved potatoes with 1 tsp oil and 1/2 tbsp cajun seasoning; roast 20-25 mins.
  3. Heat avocado oil in a skillet over medium-high heat. Cook onions 2 mins, add ground meat, salt, and pepper, and brown 5-7 mins.
  4. Whisk yogurt, mayonnaise, ketchup, mustard, cajun seasoning, and pickle juice for smash sauce. Adjust consistency with more juice if needed.
  5. In bowls, layer cooked potatoes, meat mixture, cheese shreds, chopped lettuce, cherry tomatoes/pickles, red onion slices, and drizzle with smash sauce.

Mix frozen waffle fries and baby potatoes for optimal texture.
For vegan version: Use coconut yogurt and vegan cheddar.
Fresh tomatoes or cucumbers can replace cherry tomatoes.
Add bbq sauce or hot sauce for extra customization.
Store leftover sauce in the fridge for up to 5 days.
