Method
 

  1. Whisk olive oil and fajita seasoning in a small bowl
  2. Place chicken in a Ziploc bag with marinade; seal and refrigerate for at least 1 hour
  3. Grill chicken over medium heat 4-5 minutes per side until 165°F; let rest 20 minutes
  4. Meanwhile, cook rice/couscous according to package instructions
  5. After resting, slice chicken and assemble bowls with rice as base, adding grilled chicken and toppings
