Ingredients
  

  • Steak (Ribeye or Strip), 1 large
  • Cowboy Butter Rub 2 tbsp
  • Neutral Oil (canola or avocado), as needed
  • Soy Sauce, ½ cup (low-sodium preferred)
  • Rice Vinegar + Sugar, ¼ cup each (substitute for mirin)
  • Sugar, ¼ cup
  • Egg Yolk or Buttermilk, 1
  • White Rice, 1.5 cups cooked
  • Sesame Seeds, 1 tbsp
  • Scallions or Chives, 2 tbsp chopped

Method
 

  1. Preheat skillet over medium-low heat (300°F) until smooth
  2. Add soy sauce, rice vinegar, and sugar. Simmer until thickened, 5-7 minutes
  3. Remove from heat, whisk in egg yolk or buttermilk
  4. Pat steak dry and season with Cowboy Butter Rub
  5. Heat oil in skillet, sear steak until desired doneness (4-5 minutes per side for medium-rare)
  6. Rest steak 5 minutes, then slice
  7. Serve steak over rice, drizzle with Donburi Sauce, and top with sesame seeds and scallions

Notes

Substitute mirin with ¼ cup rice vinegar + ¼ cup sugar
Toast sesame seeds lightly for extra depth
Use pre-cooked rice to save time
For a nut-free version, omit sesame seeds
