- Preheat skillet over medium-low heat (300°F) until smooth
- Add soy sauce, rice vinegar, and sugar. Simmer until thickened, 5-7 minutes
- Remove from heat, whisk in egg yolk or buttermilk
- Pat steak dry and season with Cowboy Butter Rub
- Heat oil in skillet, sear steak until desired doneness (4-5 minutes per side for medium-rare)
- Rest steak 5 minutes, then slice
- Serve steak over rice, drizzle with Donburi Sauce, and top with sesame seeds and scallions

Substitute mirin with ¼ cup rice vinegar + ¼ cup sugar
