- Preheat oven to 425°F. Line parchment paper in a 9×9" baking dish
- Pat steaks dry with paper towels
- Mix marinade in steaks' dish: 1 tbsp olive oil, lime zest/juice, 1 tsp canola oil
- Flip steaks to coat both sides; marinate 15 minutes
- Rinse jasmine rice 20 seconds
- Boil rice with 1¼ cups water, 5 mins simmer, 10 mins steam (add lime zest during steaming)
- Sauté black beans with 1 tbsp water; add corn and simmer 5 minutes
- Top rice with seared steak slices, salsa, beans, tomatoes, and cilantro
