Ingredients
  

  • 1¼ pounds sweet potatoes
  • 1 tablespoon avocado oil (or olive oil)
  • 1½ teaspoons kosher salt
  • ½ teaspoon ground cumin
  • 1 pound 90% lean ground beef
  • 1½ teaspoons season salt (garlic/onion powder mix)
  • 6 ounces black beans (drained)
  • 1 small avocado
  • 2 ounces cheddar cheese
  • 16 oz cottage cheese
  • Drizzle hot honey (or maple syrup substitute)
  • Optional: dried mango

Method
 

  1. Preheat oven to 375°F
  2. Line 18x13-inch baking pan with parchment
  3. Combine sweet potatoes, oil, 1 tsp salt, cumin, garlic/onion powder, and paprika
  4. Spread in single layer; roast 30-35 minutes
  5. Cook beef in skillet until browned; add season salt
  6. Assemble bowls: add roasted sweet potatoes, beef, black beans, avocado, cheese, cottage cheese
  7. Glaze with hot honey/maple syrup mixture
