- Preheat oven to 400°F (200°C)
- Toss cubed sweet potatoes with olive oil, chili powder, paprika, cumin, 1 teaspoon salt, oregano, garlic powder, and onion powder
- Spread sweet potatoes on a baking sheet in a single layer
- Roast for 25 minutes, flipping halfway, until caramelized and tender
- In a skillet, cook ground beef over medium heat until browned; drain fat
- Stir in remaining spices, black beans, and optional 1/4 cup vegetable broth for moisture
- In a serving bowl, layer rice, seasoned beef mixture, roasted sweet potatoes, red onion, and cilantro
- Add optional toppings like salsa, avocado, or lime juice before serving
Notes
Use fresh garlic/onion for sharper flavor
Substitute ground beef with halal chicken, tofu, or jackfruit for vegetarian or alternate proteins
Smoked paprika adds depth but isn't required
Double the spice mix if making tortilla-less burrito bowls
