  • 2 cups cubed sweet potatoes (about 2 medium)
  • 1 tablespoon olive oil
  • 1 pound ground beef (halal)
  • 2 tablespoons chili powder
  • 1 tablespoon sweet smoked paprika (ensure alcohol-free if concerned)
  • 1 tablespoon ground cumin
  • 2 teaspoons kosher salt (adjust to taste)
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup cooked long grain white rice
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • Optional toppings: salsa, diced heirloom tomatoes, avocado, vegan cheese, lime wedges

Method
 

  1. Preheat oven to 400°F (200°C)
  2. Toss cubed sweet potatoes with olive oil, chili powder, paprika, cumin, 1 teaspoon salt, oregano, garlic powder, and onion powder
  3. Spread sweet potatoes on a baking sheet in a single layer
  4. Roast for 25 minutes, flipping halfway, until caramelized and tender
  5. In a skillet, cook ground beef over medium heat until browned; drain fat
  6. Stir in remaining spices, black beans, and optional 1/4 cup vegetable broth for moisture
  7. In a serving bowl, layer rice, seasoned beef mixture, roasted sweet potatoes, red onion, and cilantro
  8. Add optional toppings like salsa, avocado, or lime juice before serving

Notes

Use fresh garlic/onion for sharper flavor
Substitute ground beef with halal chicken, tofu, or jackfruit for vegetarian or alternate proteins
Smoked paprika adds depth but isn't required
