Ingredients
  

  • Extra-virgin olive oil, 2 tablespoons
  • Fresh lime juice, 3 tablespoons
  • Garlic clove, minced, 1
  • Sea salt, ¼ teaspoon
  • Cubed watermelon, 5 cups
  • Diced English cucumber, 1 cup
  • Red onion, ¼ cup, thinly sliced
  • Crumbled feta cheese, ⅓ cup
  • Avocado, sliced, 1

Method
 

  1. In a small bowl, whisk together olive oil, lime juice, minced garlic, and sea salt to make the dressing.
  2. In a large mixing bowl, combine cubed watermelon, diced cucumber, and thinly sliced red onion.
  3. Stir in the dressing until all ingredients are well coated.
  4. Top the salad with crumbled feta cheese and sliced avocado.
  5. Chill for a few minutes before serving for a cooler and more refreshing experience.

Notes

For a milder flavor, substitute red onion with shallots or green onions.
Feel free to add jalapeño slices for a bit of heat.
For a vegan version, omit the feta cheese and use a vegan alternative.
